Take whole potatoes and bake as you would normally. When around 20 minutes from being done, take them out and allow to cool. Once cool slice into wedges (as thin or chunky as you like) keeping the skin on each wedge. Brush the skins with butter and place skin side down on a baking tray. Brush the top sides of the wedges with butter, and season liberally with freshly ground sea salt and black pepper. Place back in the oven (180 degrees) for approx 20 minutes then turn the oven up to full for the last 5 - 10 minutes, making sure you keep an eye on them so they don't burn. Delicious eaten hot or cold with a dip.
